Tomato Basil Gazpacho Soup

MmmMmm!  Indulge yourself in this beautiful and hearty gazpacho soup!

Tomatoes are a rich source of vitamins K, A, C, folate and minerals like potassium, copper, and manganese.  They are great for your skin, hair, heart health, blood pressure, improving vision, and fighting osteoporosis.   Eat up!


Makes 1 serving

1 1 /2 lb Vine Tomatoes
1 Scallion
1/2 Red Pepper
1/2 Lemon (juiced)
A generous handful of Basil
1 cup Zucchini (diced)
1 cup Cucumber (diced)

1 cup Cherry Tomatoes (diced)
2 TBSP Shallot (diced
1/3 cup Sun Dried Tomatoes soaked for 15 minutes (Do NOT use ones in oil or have anything added like salt)

*** Note:  For a heartier soup, double the zucchini, cucumber, and cherry tomatoes in the recipe. Update:  I made this tonight (April 27, 2015) and added chopped super ripe juicy mangos about 2cups.  It gave it an AMAZING tropical flavor!

Add the first 6 in in a blender.  Blend on low for a until a chunky salsa texture is acquired.  Pour half of the mixture in a bowl.

Blend the rest of the mixture at a high speed until smoothie.  Pour into the same bowl.

Mixture in the remaining ingredients and ENOY!! Xx
