Ingredients for preparing soup
1 1 /2 lb Vine Tomatoes
1/2 Red Pepper
1/2 Lemon (juiced)
A generous handful of Basil
1 cup Zucchini (diced)
1 cup Cucumber (diced)
1 cup Cherry Tomatoes (diced)
2 TBSP Shallot (diced
1/3 cup Sun Dried Tomatoes soaked for 15 minutes (Do NOT use ones in oil or have anything added like salt)
*** Note: For a heartier soup, double the zucchini, cucumber, and cherry tomatoes in the recipe. Update: I made this tonight (April 27, 2015) and added chopped super ripe juicy mangos about 2cups. It gave it an AMAZING tropical flavor!
Add the first 6 in in a blender. Blend on low for a until a chunky salsa texture is acquired. Pour half of the mixture in a bowl.
Blend the rest of the mixture at a high speed until smoothie. Pour into the same bowl.
Mixture in the remaining ingredients and ENOY!! Xx
